Gelato is a print-on-demand producer: it makes and ships the product, for the cost of the item and shipping with no subscription and no commission. Order Desk is not a printer at all, it is routing software that sits between the shops you sell on and whichever print partners fulfil the orders, from $20 a month plus 25 cents an order. These are not rivals: Order Desk is what you add once Gelato is one of two or more suppliers you route orders between, not a replacement for it.

Print on demand with local production
Gelato routes each order to whichever of its partner printers sits nearest the buyer, so a shirt ordered in Berlin is made in Germany rather than shipped from Ohio. Delivery is faster and the carbon story is better. Its catalogue is narrower than Printful's, and the subscription that carries the real discounts is a separate cost.
Route orders to whoever is printing them
Order Desk sits between the shops a creator sells on and the printers who fulfil the orders, applying rules that decide which item goes to which supplier. That matters the moment a catalogue spans two print partners or a marketplace and a storefront at once. It integrates with several hundred services rather than being tied to one. This is plumbing, and it is bought by people whose fulfilment has already become a spreadsheet.

Do the crossover sum before picking a tier, because at a few hundred orders a month Pro is already cheaper than Starter once the per-order fee is counted. Anybody still on one supplier should wait, since this is infrastructure that only earns its fee when routing gets complicated.
Pick Gelato on its own if you sell through one storefront and it is your only print partner. Its own supplier integration already routes orders to it directly, with no subscription, no commission and no minimum order, so a layer like Order Desk on top would be paying for something you do not need yet.
Add Order Desk once your catalogue spans more than one supplier, Gelato plus another print partner, or apparel plus something that is not apparel, or you sell the same products through a storefront and a marketplace at once. Starter is $20 a month plus 25 cents an order, and Order Desk's own listing advises running the crossover sum first: at a few hundred orders a month, Pro's $60 plus 10 cents is already cheaper than Starter once the per-order fee is counted.
